Routine inspection conducted of facility. Premise is in excellent sanitary condition. The following was noted at time of inspection:

1. Temperatures
- Stand-up stainless steel cooler units at 4C or less
- Chest freezer maintained at -18C
- Stand-up freezer units in dry storage area at -18C or less
- Cooler and freezer units equipped with thermometers
- Temperature logs maintained in the kitchen area for the stand-up coolers

2. Hygiene and sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizer spray bottle labelled and contains 200 ppm chlorine bleach residual
- High-temperature dishwasher sanitizes at 74C at the plate (final rinse cycle); wash temperature at >60C
- 2-compartment warewashing sink and 2-compartment prep sink maintained in sanitary condition
- Ventilation canopy well maintained and in excellent sanitary condition
- Deli slicer and can opener is well maintained - No grime / debris noted inside
- Kitchen utensils and equipment inside drawer are well maintained

3. Storage Practices
- Food products are all stored at least 6" off the floor
- Raw items (e.g. eggs) stored below ready-to-eat products such as milk
- Chemicals segregated from food storage or food preparation areas
- Shelving in good condition and free from debris and grime buildup
- Products are covered when not in use and are dated based on date of preparation
- Dry storage room downstairs is generally well organized

4. Pests
- No evidence of recent, visible pest activity was noted at time of inspection

5. Administrative
- Permit posted and up-to-date
- NOTE: Please ensure that you maintain your dishwasher logs daily. Read the final rinse digital readout when dishwasher is nearing the end of its cycle - this readout should be at 180F or above

6. Please note the following:
- Some unused spray bottles are not labelled or have been depleted of sanitizer. Please organize the chemical storage area to ensure that all bottles, when they are in storage or in use, are properly labelled
