Observation: -Plugs not present for 3 compartment sink to allow for proper manual warewashing whereby items are fully submerged. *This was identified on the previous routine inspection Aug. 2017 and has not been addressed.
Corrective Action(s): -Supply plugs (3) for 3 compartment sink to allow for proper warewashing for items which are not washed in the dishwasher (ie. hoppers, pitchers) [Correction date: 1 week]

Observation: -Spills noted on back floor, coffee splatter noted on wall adjacent to pitcher spray sink, miscellaneous debris on floor in back storage area, build up of grime noted on floor around legs/wheels of equipment and corners of floor.
-Mold/mildew noted on caulking/sealant at wall counter interface adjacent to pitcher spray sink.
Corrective Action(s): -More detailed cleaning is needed in hard to reach areas. Thoroughly clean areas above to remove any buildup/spills/debris. For the floors, move all moveable equipment and then thoroughly clean the entire floor paying attention to the corners and hard to reach areas.
-Replace caulking/sealant in area noted above. [Correction date: 1 week]

Comments

-Handsinks in front service are and back storage/dishwashing area supplied with hot/cold running water, liquid soap and paper towel.
-Washrooms supplied with hot/cold running water, liquid soap, and hand dryers
-Coolers were operating at adequate temperatures (4C or colder)
-Self serve cooler at 3C
-Undercounter barista cooler 3C
-Undercounter (cold drink station) cooler 4C
-Small undercounter cooler 3C
-2 door cooler (back) 2C
-1 door cooler (back) 0-1C
-Freezers were functional and maintaining product in a frozen state
-1 door freezer -24C
-2 door freezer -18C
-Coolers/freezers equipped with thermometers for monitoring temperatures. Temperature records were up to date. Staff on duty were knowledgeable about corrective actions to be taken if temperatures are not within acceptable range.
-High temperature dishwasher functional and met sanitizing temperature required. Final rinse was 80.6C at dish surface measured with min/max thermometer.
-Quats solution present with wiping cloths stored in it. All containers of solution had adequate residual (200ppm quats)
-Quats solution (200ppm) present from dispenser at 3 compartment sink. Test strips present for verifying concentration.
-No signs of pest activity noted at the time of the inspection. Pest control contract in place.
*Shift Supervisor reported renovation was delayed and is now planned for October.
