Observation (CORRECTED DURING INSPECTION): Was advised trays are not and containers are not sanitized.
Corrective Action(s): All food contact surfaces, containers, utensils must be washed, rinsed and sanitized after use.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): 1. Watch staff member handle raw chicken with gloves wipe gloves on paper towel then handle food for customer. When asked to wash hands, the hands were washed with gloves on.
2. Paper towel roll was heavily contaminated with chicken and meat by products from lack of hand washing.
Corrective Action(s): 1. Remind all staff to remove gloves and wash hands when gloves become heavily contaminated, when switching tasks (i.e. helping customers) or switch products (i.e. chicken to meat)
2. Discard paper towel roll as heavily contaminated, will only contaminate hands if used.

Observation (CORRECTED DURING INSPECTION): Found 2 boxes of open chicken on the floor while being processed at time of inspection
Corrective Action(s): Ensure all food is kept 6" (15 cm ) off of the floor at all times.

Observation (CORRECTED DURING INSPECTION): Found frozen thigh on a shelf in the back
Corrective Action(s): Food must be thawed in the cooler, or under running water. As there is no prep sink, must thaw foods in the cooler.

Comments

- Coolers were 4 C or colder
- Freezer was - 16 C
- Hand sinks had liquid soap, paper towel, hot and cold water
- Sanitizer was 200 ppm quat
- Chlorine bleach is also on site ( do not mix with quat sanitizer)
- No signs of pest activity noted during inspection
NOTE: 1 container of ready to eat food on site, must be kept away from raw product and staff are to ensure hands are washed before handling for the customer.
