Observation (CORRECTED DURING INSPECTION): The Quats sanitizer in some of the spray bottles had strength of 50ppm. This is too low, the strength must be at least 200ppm to kills pathogens. Surfaces are not being sanitized.
Corrective Action(s): Immediately discard the solution in spray bottles and replenish with fresh Quats sanitizer. Sanitizer solution shall be changed with new solution every 2-3 days. During the inspection, new sanitizer solution was placed in the spray bottles.

Observation: Cooking utensils (tongs, knives, spoons, etc.) stored in a bucket of Quats sanitizer between use, are not being rinsed off with water, prior to use. This is unsafe as the sanitizer will contaminate food and may make customers ill.
Corrective Action(s): Immediately retrain staff to rinse cooking utensils, which are stored in sanitizer between use, with water before coming into contact with food.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The door on the drink cooler, in the front waitress/service area, is broken and hanging on an angle. The door has a gap which cold air is escaping. The cooler will work harder to keep the food cold.
Corrective Action(s): Repair or replace the drink cooler door, so that it can properly close and seal in cold air at all times.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature, multi-tank conveyor dishwasher had rinse cycle temp of 69.1C (minimum required is 66C) at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles, utensil & cloth buckets had strength of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor on racks, shelves, and pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopies and filters are clean and were professionally serviced in January 2023.
- No signs of pests.
- Valid FoodSafe Level 1 certified (or equivalent course) staff present.
- All violation from the last inspection have been corrected.
