Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Soiled butter bin stored in microwave.

Multiple soiled wiping rags on counters and within handsink. No sanitizer solution prepared.

Staff discussed food preparation counters are cleaned upon closing time in the evening.
Correction: All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

All food equipment, food utensils and food contact surfaces must be cleaned of all debris, then sanitized after use. Food equipment, utensils and work surfaces in constant use for the same purpose must be cleaned and sanitized a minimum of every 4 hours or when changing uses.

Provide supply of test strips to verify quaternary ammonia sanitizer strength.

New supply of vinyl disposable gloves provided. Use of latex gloves discontinued.

Wiping rags in use stored in 200 ppm Quaternary Ammonia sanitizer solution.

Food containers observed in sanitary condition.

Test strips provided to verify sanitizer concentration.

Premise cleaning has been conducted. Ensure cleaning is conducted daily to maintain premise sanitation and discourage pest activity.

Chemicals stored together away from food and food related items.

Supervisor is completing Foodsafe course and will take exam Jan 20, 2022.

Correction Order complied with and is now rescinded.
