Observation (CORRECTED DURING INSPECTION): Operator was unsure how to make a food grade sanitizer solution with bleach. Operator states she has Lysol sanitizing in use. Lysol sanitizing wipes are not intended for food contact surfaces and can only be used for common touch surfaces like door knobs or point of sales terminals.

A 100 to 200 ppm chlorine solution is required for sanitizing during food service for food contact services and equipment.
Corrective Action(s): Provide education to staff to accurately make a sanitizer solution. Use test strips to test for concentration. 100 to 200 ppm chlorine solution or a 200 to 400 ppm quat solution is required.
Staff was educated on how to create chlorine solution at the time of inspection.

Observation: 1. Food products such as bags of onions placed directly on the floor near grease trap.
2. Lids missing on bulk containers and sauces in walk in cooler and deli cooler, such as the sugar/salt bins and meat sauce inserts.
Corrective Action(s): 1. Do not place food products directly on the floor or on contaminated grease trap. Place food on dedicated shelving 15 cm above the floor. Correction required today.
2. Ensure covers for food containers are put back on after service. Correction required today.

Observation: Kitchen staff on site is not certified in FoodSafe Level 1. At least one staff member on site must have FoodSafe Level 1 during service. Kitchen staff are untrained in food handling and sanitation procedures.
