-Dim Sum production has been discontinued. Production area has been renovated and incorporated into the bakery.
-Sushi preparation area will be continued as an existing, independent prep space
-Provided application form for operator to rename "Dim Sum" production area to "Sushi production area"
-Sushi production involves assembly and packaging of sushi rolls for sale in the refrigerated display case
-Equipment/utensils will be washed in the 2-compartment sink using the 2-compartment manual warewashing method
-Quats sanitizer available at the 2-compartment sink. Operator indicates that they will be switching to Ecolab as their chemical supplier beginning in August 2021.
-Refrigerators operating at/below 4 degrees Celsius
-Hand-sink supplied w/ soap and paper towels
