Observation (CORRECTED DURING INSPECTION): 1. No sanitizer readily available in front service area.
2. No drain plugs available for the two compartment sink in the refrigerated room.
Corrective Action(s): 1. Ensure sanitizer is made up and available in this area at all times during operation and that food equipment/contact surfaces are routinely sanitized.
2. Obtain drain plugs for the two compartment sink in the refrigerated room. In the interim, the drain plugs for the two compartment sink beside the service area can be shared.

Observation (CORRECTED DURING INSPECTION): Noted a missing flap for one of the open doors to the outside. The other bay door had the flaps tied back completely.
Corrective Action(s): Keep flaps closed to prevent the entry of pests. Keep bay doors closed as much as possible to prevent pest entry.

Observation: Noted duct tape wrapped around the tap at the two compartment sink in the refrigerated room.
Corrective Action(s): Remove tape and repair/replace tap as needed.

Comments

- Premises is a meat processing plant that cuts and repackages various types of raw meat (poultry, beef, pork, lamb..etc)
- All hand wash stations had soap, paper towel, hot and cold running water
- All coolers less than 4C or less. All freezers less than -18C.
- Meat processing room 6C at time of inspection.
- General sanitation satisfactory. No obvious signs of pest infestation.
- 200ppm quat in spray bottles. Test strips available. Quat used for disinfecting food equipment/surfaces throughout the day.
- Bleach available on site for biweekly sanitizing/disinfecting of all food equipment. Obtain test strips.
