Observation: Observation: Ice machine had an accumulation of mould growth inside. Mould can contaminate the ice and ice is a food.

Correction: Immediately discard the ice within the machine. Clean and sanitize the inside of the ice machine. Increase the frequency of cleaning the ice machine to prevent the contamination of food with mould and other disease-causing organisms.

Observation: Observation: The floors underneath counters and coolers/oven showed an accumulation of food and debris. Walls behind equipment also showed staining caused by spilled/fallen food. These areas will attract pests, which have the potential to contaminate food and food contact surfaces.
Date to be corrected by: June 6/18
Correction: Clean these areas. Clean floors regularly. Scrub all corners, hard-to-reach areas and areas under and behind equipment. This will keep the premises in sanitary condition and prevent the attraction of pests.

General comments:
* Quats sanitizer spray was at 400ppm + (very dark on indicator strip). 200ppm is the required amount of Quats. Chlorine bleach in buckets was at 200ppm + (bleached the test strip). A concentration of 100-200ppm chlorine is required -> after 200ppm, surfaces must be rinsed with water. Please ensure that the manufacturer's instructions are followed for Quats. 100ppm of chlorine sanitizer can be prepared by using 30ml (1 tablespoon) of 5% unscented bleach per 4.5 litres (1 gallon) of water.
- Coolers were at 4C or less
- Back glass cooler: 3C
