Observation (CORRECTED DURING INSPECTION): Bean sprouts observed at ambient temperature; internal food temperature at 12 degrees C. Note: Bean sprouts previously stored on ice which was observed to be melted. Staff stated bean sprouts were brought out of cold storage approx 1 hour before.
Corrective Action(s): Additonal ice added to bean sprout container. Ensure potentially hazardous foods (including bean sprouts) are stored at temperatures of 4 degrees C or less to limit the growth of potential pathogens (including the potential production of toxins). Alternatively, a time-tracking system may be used. Time tracking system must be approved by the Environmental Health Officer (EHO).

Observation: 1. Ice machine observed with buildup of biofilm/mildew on interior surfaces.
2. Few pieces of food equipment stored on clean storage rack in dishwashing area were observed with small amounts of food debris or build up (e.g. grating blade). Items placed into dishwashing area to be washed, rinsed, and sanitized.
Corrective Action(s): Discard ice. Ensure above-noted items are properly washed, rinsed, and sanitized to remove potential contamination. Date to be corrected by: Today.

Observation (CORRECTED DURING INSPECTION): Staff member responsible for cleaning and sanitizing meat slicer unable to describe proper method for cleaning and sanitizing this equipment. No sanitizing step in use, per staff member. Note: Meat slicer in use at time of inspection.
Corrective Action(s): Discussed proper cleaning and sanitizing method with staff member. Ensure that all food equipment, including meat slicer, is properly washed, rinsed, then sanitized after use. Follow manufacturer's directions for proper disassembly of meat slicer to ensure all areas are reached. Recommendation: Post meat slicer cleaning and sanitizing directions for staff reference.

Observation (CORRECTED DURING INSPECTION): 1. Small bowls containing food (e.g. small amounts of chopped raw vegetables) were observed to be stacked above food inserts in upper portion of prep cooler.
2. Personal belongings (e.g. hats) stored on wire shelf above table in food storage/prep area.
Corrective Action(s): 1. Bowls removed. Ensure containers are not stacked on top of one another without proper covers/lids in place, as the bottom surface of the container(s) may potentially contaminate food. Do not stack items in the upper portion of the prep cooler as food items may not be maintained at temperatures of 4 degrees C or less.
2. Personal belongings removed. Ensure that personal belongings are stored in a designated area away from food and food equipment/utensils/surfaces to protect food from potential contamination.

Observation: Small white freezer measured at -16 degrees C.
Corrective Action(s): Ensure above-noted freezer is capable of maintaining food at temperatures of -18 degrees C or less. Have freezer adjusted or serviced as necessary in order to meet this requirement. Date to be corrected by: July 14, 2021.

Observation: 1. Small gap of approx. 1 cm observed underneath back door located near mop closet.
2. Small gaps observed along perimeter (sides and top) of screen door located near walk in cooler.
Corrective Action(s): Ensure all gaps are properly sealed to prevent potential pest entry. Obtain an appropriate door strip for bottom of door noted above. Date to be corrected by: July 14, 2021.

Observation: Food debris, grease, and/or dust observed in the following areas:
1. Dry storage room near and on vent cover (dust)
2. Beneath shelving and equipment in dry storage area, dishwashing area.
3. Cook line (walls, ventilation canopy surfaces, including baffles, floors).
Corrective Action(s): Ensure above-noted areas are properly cleaned. Food debris and/or grease may potentially contaminate food, and may potentially attract pest activity. Dust may potentially contaminate food and surfaces. Date to be corrected by: July 14, 2021.

Observation: 1. Multiple pieces of food equipment not observed to be in good working order. Large gashes observed in metal mallet, interior surface of pan is peeling away, wire mesh of sieve is damaged.
2. Small leak observed under dishwasher.
3. Ware washing sink tap not in place (note: tap may still be turned using tool).
Corrective Action(s): 1. Equipment discarded during inspection. Ensure that all food equipment is in good working order to prevent potential contamination of food (e.g. broken or peeling pieces) and to allow for effective cleaning and sanitizing.
2. Ensure leak is repaired. Leaking water may potentially attract pest activity. Date to be corrected by: July 14, 2021.
3. Ensure ware washing sink taps are in place and in good working order to facilitate easy use of hot and cold water at ware washing sinks. Date to be corrected by: July 14, 2021.

Ensure proper food-grade containers and utensils that are designed for re-use are used instead.
