Observation: Overhead sprayer nozzle at the ware-washing sink had build-up of black debris/mould present over it.
Corrective Action(s): Clean the overhead sprayer nozzle to remove the build-up of mould/debris; Correct today.

Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine sanitizer was measured in the sanitizer pail in the back area.
Corrective Action(s): Staff setup 100 ppm chlorine sanitizer (1/2 teaspoon bleach per L of water) to sanitize prep. surfaces. Ensure to setup the bleach water (100 ppm chlorine sanitizer) every morning and change it frequently throughout the day to maintain 100 ppm chlorine sanitizer for sanitizing prep. surfaces throughout the day.

Observation: Permit to operate was not posted in a conspicuous location of the food service establishment. This is a repeat violation.
Corrective Action(s): Ensure to post your permit to operate in a conspicuous location of the food service establishment; Correct within 2 months.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Bag of raw onions was observed stored below the ware-washing sink next to bleach bottles. Bag of raw potatoes was observed stored directly on the floor corner near the backdoor.

2. Tomato sauce was stored inside an open metal can in the walk-in-cooler.
Corrective Action(s): Ensure to store food products at least 6 inches off the floor away from sources of potential contamination. Ensure food products are stored separately from chemical cleaners or sanitizing agents. Once cans are opened, transfer the remaining food contents into covered food grade containers.

Observation: Build-up of grease/debris was present on the floor and inner cabinet surfaces below the deep fryers.
Corrective Action(s): Clean the above-noted areas to remove the build-up of grease/debris; Correct by November 25, 2022. Ensure to regularly clean this area to prevent accumulating grease/debris in the future as well.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. A knife on the magnetic strip had a taped handle that was accumulating debris.

2. Lid of a dry storage bin was taped.

3. Overhead sprayer at the ware-washing sink was taped.
Corrective Action(s): Discontinue practice of taping equipment since tape is not made of durable, impervious to moisture, smooth, and easy to clean materials and can harbour debris/grime over time.

1. Either remove the tape and clean and sanitize the knife if the handle below the tape is in good working order OR remove the knife if the handle is broken below the tape. Staff informed they would remove the knife with the taped handle today.

2. Replace the lid of the dry storage bin; Correct within a month. Transfer the food contents into another covered dry storage bin with an intact lid; Correct today.

3. Remove the tape from the overhead sprayer and make the necessary repairs to maintain the overhead sprayer in good working order (e.g. without any leaks); Correct within 1 week.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Staff informed they do not hold valid FOODSAFE Level 1 or equivalent course training. This is a repeat violation.
Corrective Action(s): Ensure at least one staff member on duty in the absence of the Operator holds valid FOODSAFE Level 1 or equivalent course training. Ensure enough staff successfully complete a FOODSAFE Level 1 or equivalent course to fulfill this requirement; Correct within 1 month and provide an update to the district Environmental Health Officer.

Both handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Walk-in-cooler and both prep. coolers were at or below 4 degrees C.
Hot-held food was at or above 60 degrees C.
Raw meat was stored on the lowest shelves in the walk-in-cooler separately from ready-to-eat food.
100 ppm chlorine sanitizer was available in the front service area.
Ice machine appeared to be in a satisfactory condition.
Pest control program is in place via the mall.

Note: Stock room will be inspected on a separate day as staff did not have keys to the stock room at the time of inspection.
