Observation (CORRECTED DURING INSPECTION): Noted open bag of cheese in upright cooler ( close to dishwashing area) and several inserts without cover- cheese pieces noted inside blueberry sauce and other sauce
Corrective Action(s): - Discard sauces due to potential dairy allergy
- Ensure all foods are fully covered - after opening a bag -close the bag or store in a closed food grade container

-Handsinks are accessible and are provided with hot and cold water, liquid soap, and paper towels.
- Coolers are maintaining acceptable temperatures (≤4C).
- Freezers are maintaining acceptable temperatures (≤-18C)
-Accurate thermometers are noted .
- Hot Holding Units are maintaining hot potentially hazardous foods at acceptable temperatures (>60C).
- Food storage practices appear satisfactory. Storage is organized, food is protected from contamination.
- Cooked/processed foods are labeled with prep date and used by date -no expired/passed use date noted
- Color coding noted for tongs and boards
- Ice scoop is stored properly and a sanitary manner.
- Cook and prep line utensils stored in ice water between uses.

- Dipper well is operational.
- Wiping cloths stored in 200 ppm QUATS.

-High temp dishwasher temp measured 80 oC at plate
- General sanitation of the premises is very good at time of visit
-Good personal hygine noted by staff ( hair control- washing hands , clean uniform/apron)
- No pest activity observed inside premises. Pest control services provided by a pest control company (Ecolab) - last service report is reviewed
- Staff washroom sinks are accessible and have hot and cold water, liquid soap and paper towels.
