Observation: Front sweets cooler was at 8C. Operator's cooler thermometer (separate from cooler unit) also registered 8C. Cooler unit is already set to -5 and cooler thermomter registered -2.
Corrective Action(s): Service cooler unit and ensure it can maintain 4C or less at all times.

Comments

-Follow-up inspection to August 14, 2018.
-Pails and containers or sauce were probed at 4C. Items appeared to be properly cooled.
-Bleach sanitizer spray bottles were both tested at 100ppm chlorine.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface.
-Operator has obtained new chlorine test strips.
-Operator states potato press is disassembled after each use for cleaning and sanitizing. Potato press was in use at the time of inspection.
-Raw foods were properly stored below ready-to-eat foods at the time of inspection.
