Observation: .
1) Pony wall by manual dishwashing area has encrusted black clumps of mould/debris all along top of ceramic wall and green mould under the caulking on the trolley washing side of the wall (visible behind plastic barrier)
2) Ceramic tile on the side of the wall is missing grout and leaching white powdery material onto tile.
Floor on the other side of this wall beside floor grate for washing of food trolleys is also damaged - (broken and missing tiles).
3) Drain under sink beside refrigerator / dessert, salad and sandwich station is leaking.
Corrective Action(s): .
1) The pony wall and surrounding area need a thorough cleaning and sanitizing to remove mould/debris and repair/replacement so that it is smooth, impervious and easily cleanable.
2) Floor in trolley washing station needs repair/replacement so that it is smooth, impervious and easily cleanable.
3) Leaking plumbing drain to be repaired.

Comments

No other problems noted at the time of inspection, all refrigerator and freezer temperatures meet requirements, dishwasher is 73.7 at the plate surface, general sanitation and food handling satisfactory, no insect or rodent activity noted.
