301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Hot water is not always available at the 3 compartment sink. The water temperature is not consistent due to the other high domed food processing at the browing co. / FO/ connected to the same hot water tank.
Corrective Action(s): By Monday, please review the plumbing issues and the future improvements at the facility. Suggestion is to clearly separate these two facilities ( FE-1 from FO ).

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Glass washer at the front/serving area did not have any sanitizer available in the final rinse.
Main dishwasher did not have any sanitizer available but after couple of cycles the chlorine has been measured at 100ppm. Test strips and daily monitoring log is available for the kitchen/ back area.
Corrective Action(s): All glasses will be washed at the main dishwasher/at the back. Please ensure that the glass washer is supplied with chlorine as approved sanitizer at the final rinse cycle. Test strips for chlorine need to be available at the front for daily monitoring of sanitizer and daily chemical log for glass washer must be available and recorded daily concentration of the chlorine.
Follow up inspection will be conducted on Monday/April 12 at 1pm.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): Quat as approved sanitizer in the spray bottles has been measured at less than 50ppm.
Corrective Action(s): Please ensure that quats need to be at minimum of 200ppm and test strips are required for daily monitoring. This violation has been corrected at the time of inspection.

Routine inspection:#249617

Met with Manager on site and discussed the following:

- outdoor patio area has been constructed as per temporary outdoor patio requirements
- Food Safety training - at least one person per shift is available with FS training
- Daily temperature logs are available on site and up to date/ Cleaning schedule and daily dishwasher chemical log
- Covid Safety plan - as per safety plan staff must complete on line app with health questionnaire before entering to the work place; calling sick policy in place; all staff have mask/properly covered the face.
- Orkin pest control is available on site
- Hand wash stations are supplied with liquid soap and disposable paper are relocated to be more accessible to the food handlers
- Cold and hot holdings equipment are in good working order
- all food in the walk in cooler is covered and protected


The following items need your attention:

- future improvements on the floor plan for FE-1 and FO ( separation between /including plumbing connection/ )
- future outdoor kitchen proposal for pizza oven
- glass washer to be supplied with approved sanitizer/ test strips to be available for daily monitoring/ daily chemical log
- hot water supply at the 3-compartment sink and main dishwasher - confirm they are in good working order during busy hours
