Observation: Food in upright display cooler in kitchen measured at 9 degree C. Coleslaw, buns, and salad sauces stored in this unit. Operator moved food from the unit to walk in cooler at the time of the inspection. Display cooler must maintain food at or below 4 degree C.
Correction:
Repair the cooler so that can maintain food temperature at or below 4 degree C.
Do not store perishables in this cooler until is repaired.

- Display cooler has been repaired and food temperature measured at 4 degree C. Ensure to keep your temperature monitoring log updated. Take food temperature twice daily in all cooling units. Take temperature for hot holding unit. Record all temperatures and keep record for next inspection.
