- Handwashing sinks provided with liquid soap and paper towel
- Coolers: 4C, Freezers: -18C
- Dishwasher: 50ppm chlorine for final rinse at plate
- QUATS sanitizer: 200ppm concentration

Note: Operator uses warm bath for "partial sous-vide"- foods are cooked after. Will confirm if district inspector has approved this process, otherwise food safety plan will need to be submitted.
