Observation: Items are being stored ontop of unused equipment. (ie: binders/food items, serving implements, box cutters, cloths, etc)
Corrective Action(s): All items are to be stored in designated areas. (food vs towels vs implements, etc.) Designate storage space for binders, etc.

Observation: Broken/unused equipment is being stored on site. (ie: Oven/stove/dough mixers, etc.)
Corrective Action(s): Remove any/all unwanted/unused items to free up space and provide better work flow. Shelving maybe beneficial to ensure all items are being stored in a designated work space.

Comments

- Temperature Control: No concerns noted this date. Monitoring is required to be conducted on site. Temperature audits reviewed.
- Mechanical Dishwasher: Hiigh Temp: Ok.
- Ensure all food contact surfaces and implements are being washed and disinfected after use or on a timely manner. Use/storage of "T towels" discussed. (Cloth towels noted being stored throughout the facility. (ie; ontop of prep lines/under prep lines, etc) Cloth towels are not to be used for handwashing procedures.
- Wiping cloth storage: As discussed! No wiping cloth buckets noted. (Spray vs cloth buckets)
- Wiping cloths, used on food contact surfaces, are to be stored in a sanitizer at all times. Cloths are to be kept completely submerged in the sanitizer at all times..
Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Ok. Ensure all items are stored in covered, food grade containers, off of floors. Use of "saran wrap" discussed. Ensure no double stacking of storage containers when saran wrap is being used to cover food items.
- Sanitary Facilities: Refer to Violation Notes. (ie: Unused equipment/items - storage)
- Chemical storage: Ok.
- Staff hygiene: Discussed.
- Sanitation: Ok. All items are to be stored in designated areas.
- Pest Control: Pest control monitoring is currently being conducted. Pest control reports are to be kept on site for review.
- Structurally: Older facility. Continue efforts to keep all surfaces in good repair. (ie: damged/broken floor tiles)
- Meat slicer cleaning and disinfection discussed.
- Ice machine cleaning and disinfection discussed. Monitoring is to be conducted on a routine basis.
- Garbage, Composting, Recycling and Oil Disposal: All items are to be kept stored in covered, rodent proof containers. No concerns noted this date.
- FoodSafe trained staff noted on site.
- Food Safety Plan and Sanitation Plans are to be kept on site. Staff training is required to be conducted.
