- Routine inspection conducted.
- Hand washing sinks were accessible/unobstructed and properly supplied with hot/cold running water, liquid soap, and paper towels.
- Low-temperature chemical dishwasher dispensed 100 ppm chlorine (residual), detected at the dish surface after rinse cycle. Test strips available for monitoring. *Please ensure to monitor with your chlorine test strips on a daily basis.
- Bleach sanitizer solution available at 100 ppm (chlorine residual) in labelled spray bottles for sanitizing surfaces.
- All coolers were maintaining temperatures a 4C or colder.
- All freezers were maintaining temperatures at -18C or colder.
- Daily temperature records (digital) maintained.
- Good food storage practices noted. All food stored properly covered and protected from contamination, with good separation between raw and ready-to-eat items.
- Equipment and utensils maintained in sanitary conditions.
- Reviewed cleaning/sanitizing procedures for the deli slicer - OK.
- Ice machine was clean, with scoop properly stored.
