-Follow-up inspection to August 15, 2022.
-Prep cooler has been serviced. Refrigeration gas was added to the cooler unit. Cooler was at 0C (top) and 1C (bottom). Continue to monitor the cooler and service or adjust as needed.
-Smaller quantities of sausages are being cooked and hot held and more water has been added to the hot holding unit. Sausages were at 60C.
-Manual slicer properly disassembled for cleaning and sanitizing after each use. Slicer was found to be clean and sanitary.
-General food storage practices good at the time of inspection. Raw meats stored below ready-to-eat foods.
-Did not observe foods thawing at room temperature at the time of inspection.
