- sprouts have been moved to a large insert in the prep cooler instead of ice bath moving around the kitchen. Excellent - raw meat prep still occurring at hand sink counter, however a cardboard barrier has been set up to prevent contamination of items on counter top. ***You must always keep the sink clear and easily accessible. - no double stacking of inserts at prep cooler - food bins have been washed down. Remember they must be washed, rinsed, and sanitized after each use!
