Observation (CORRECTED DURING INSPECTION): 1) Raw eggs were stored on the top shelf of the upright cooler. Broken raw eggs can potentially contaminate the ready to eat food product on the shelf directly below it.
2) Rice scoop was stored in water that contained no ice with a surface temperature reading of 15 deg C. Limiting the time that the scoop is stored in room temperature (danger zone) can limit the growth of bacteria.
Corrective Action(s): 1) Operator stored the raw eggs in the bottom shelf of the prep cooler.
2) The water in the container was replaced with fresh water and ice.

- Ice machine maintained in a sanitary manner, scoop is stored outside
- Overall sanitation is satisfactory, vents are in satisfactory condition
