General:
- handwashing stations stocked with soap, paper towels and hot and cold running water
> purchase paper towels that will fit in the dispenser to avoid contaminating stack of paper towels
> front handwashing station is accessible from both front prep counter and behind new prep cooler
> ensure that handwashing water does not splash onto food
- sanitizer measured 200ppm quats in spray bottles
- dishwasher reached 71C at the final rinse cycle
- meat slicer appears sanitary
- FOODSAFE requirements met
- discussed pizza at ambient temperature with operator:
> one batch is made at noon and another at 14:00
> leftovers from the noon batch are cooled and placed in cooler if not sold
- facility does not partake in the TooGoodToGo app

Note: Oven has been switched out for new model; according to operator, it is still under the same fire restrictions are previous model
