Observation:
The exhaust hood and the filters have grease accumulated on it. The service stickers indicates that it's to be cleaned in July 2018. The accumulated grease will attract pests and is a fire hazard.
Corrective Action(s):
Contact and schedule a professional company to clean the exhaust hood and filters. The filters and any accessible surface shall be cleaned every day, between the professional cleaning, to prevent build up of grease and food.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The back hand washing sink has a leaking hot water supply line. The water is pooling and harboring pests.
2) The large, white chest freezer has cracks in the inner part of the lid and around the inner frame of the freezer. The surface is not cleanable and pieces of plastic can drop into food.
Corrective Action(s):
1) Repair or replace the leaking hot water supply line.

2) Purcahse a new chest freezer and throw away the old one.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezers -14C or colder; hot holding units above 60C; and thermometers present.
- Staff completed secondary cooking of the donair meat, on the flat grill during the inspection.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer used in spray bottles. [Cl2] was 100ppm.
- General sanitation level is good, other than the mentioned area.
- A few flies observed due to front door propped open. Close doors or install screens on the doors to prevent flies from entering.
- Utensils present for food ingredients at the donair assembly station.
- Foods stored in food grade containers; covered; dated; in groups with raw proteins separate from RTE foods; and 6" off the floor on shelves, racks, or platforms.
- FoodSafe certified staff present.
- No expired foods for sale or in use. FIFO rules being followed.

A follow-up inspection to be completed during the week of Sept. 10/18 to ensure violations have been corrected.
