Observation (CORRECTED DURING INSPECTION): 25 eggs observed sitting on a shelf near the grill area. 22 Celsius internal temperature. Discarded.
Corrective Action(s): Always keep eggs refrigerated.

Observation (CORRECTED DURING INSPECTION): large plastic insert full of blanched fries is sitting on the counter beside the fryer. Internal temoerature is 16 Celsius. Keep in fridge or keep hot.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Kitchen knives observed stored in gap between two prep coolers. This space is not clean; do not use for knife or other utensil storage. Also at least one of the knives was still dirty when stored. Clean and sanitize knives thoroughly before storing them for re-use.

Observation (CORRECTED DURING INSPECTION): 1) No chlorine was detected in the dishwasher rinse cycle (low temp dishwasher)
2) No iodine was detected in the glasswasher rinse cycle.
Sanitize manually.(discussed) Failure to have these machines repaired within 2 days will result in an order for the use of disposable dishes only.

Observation: At least one hole for mice oserved in back storage room, in corner. Numerous droppings noted beside hole. Close holes.

Observation: Numerous corners and shelves require cleaning. Of note were the following areas;
1) The fridge shelves require a thorough cleaning.
2) Under the grill and dishwasher require cleaning.
3) The bar counters underneath the bar matting require a thorough cleaning; the bar matting was stuck to the shelves in several areas.

Observation: Shelves are covered in aluminum foil. Do not use foil or other materials to cover shelves; clean them frequently.

Observation: See also #302. Both dishwasher and glasswasher have no detectable sanitizer in rinse cycle. Repair. Sanitize manually until repaired. Discussed manual sanitization. Re-inspection in two days.

Observation: 1) Tiles missing in two large patches at kitchen entrance. Replace tiles.
2) Broken tile noted under dishwasher. repair.
3) Sink spray nozzle repaired with duct tape. Repair properly.
4) Rusty shelves noted in fridge. Refinish or replace.
