Observation (CORRECTED DURING INSPECTION): Sanitizer bucket for the low temperature dishwasher was empty when it was tested. Operator immediately replaced the bucket and called a technician during the inspection. Chlorine was measured at 50-100ppm after corrected.
Corrective Action(s): Ensure the dishwasher is tested daily to ensure the sanitation achieves 50ppm at plate level

Observation (CORRECTED DURING INSPECTION): The following areas required attention:
1) Area behind the cook line had excessive build-up of grease. Staff were notified and they immediately cleaned and sanitized the area
2) The ceiling tiles above the cook line area have excessive dust build-up. Operator is replacing the tiles
Corrective Action(s): Ensure these areas are cleaned and sanitized more frequently to keep up with the spills and splashes from cooking
