Observation: Equipment/utensils/food contact surfaces not properly washed and sanitized.
Observation: The low-temperature dishwasher was not functioning to achieve a minimum of 50 ppm chlorine residual at the dish surface after the final rinse cycle.
Correction: Have the dishwasher repaired immediately. Ensure test-strips are used to test sanitizer levels frequently to ensure adequate function of the dishwasher. Re-wash and sanitize all the dishes and utensils.
Rationale: Adequate sanitation is crucial for food safety. A properly functioning dishwasher ensures dishes and utensils are washed and sanitized to remove pathogens and prevent their spread.

Observation: Food not protected from contamination.
1) Observation: Clean utensils (ladles, tongs, whisks) were stored in a dirty bucket with food debris at the bottom.
Correction: Operator moved the utensils to the dishwashing area for re-washing. Ensure buckets/boxes for storing clean utensils are washed and sanitized as well.
Rationale: dirty storage containers can cross-contaminate clean utensils and cause a foodborne illness.

2) Observation: Scoops and bowls used as scoops were stored inside dry ingredient containers fully submerged in food.
Correction: Operator removed the scoops at the time of inspection. Ensure scoops are stored outside the bins or in a fashion that does not allow the handle to contact the food.
Rationale: Handles are potentially contaminated surfaces that can cross-contaminate food and cause a foodborne illness.

3) Observation: Cutting board at the preparation cooler at the back was extremely worn out with deep cuts.
Correction: Replace the cutting board or use other stations for cutting with better cutting boards.
Rationale: Worn-out cutting boards are difficult to clean and sanitize as food gets deep inside the cuts which encourages pathogens to grow and cross-contaminate food.
