Observation: Foods were double stacked directly on top of one other, without a barrier between items and scooping bowl was stored inside the noodle container.
Corrective Action(s): Ensure foods are stored in a sanitary manner to prevent potential contamination of foods.

Observation (CORRECTED DURING INSPECTION): Chest freezer by the back door was at 0C - foods were beginning to thaw. Freezer unit was unplugged at the time of inspection.
Corrective Action(s): Ensure frozen potentially hazardous foods are maintained at.or below -18C. Freezer was plugged in at the time of inspection.

Observation: Rodent droppings were observed in the facility. Pest issues have improved from the last inspection.
Corrective Action(s): Ensure facility is maintained in a condition free of pests. Continue to monitor for pest activity and contact pest control services as needed.

Observation: Sanitizer spray bottle was unlabelled.
Corrective Action(s): Ensure containers are properly labelled to identify their contents in order to prevent accidental mixing and/or misuse of chemicals.

Comments

-Walk-in cooler was at 3C (motor was recently replaced).
-Prep cooler was at 4C (top and bottom).
-Front sweets cooler was at 2C.
-Chest freezers in the kitchen (except for small freezer by the back door) ranged from -14C to -21C.
-Storage area freezer were at -14C/-23C.
-Foods were cooked to greater than 74C.
-Sauces are cooled rapidly in metal bus pans in the chest freezer. Sauces were observed in the freezer at the time of inspection and were less than 4C.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash station supplied with hot and cold running water, liquid hand soap and single use paper towels. Both operators observed practicing good hand hygiene practices at the time of inspection (hands were washed after picking debris off the floor and moving the trash container).
-Potato dicer was found to be clean and sanitary. Operator is properly cleaning and sanitizing the dicer after each use.
-Sweets by the cash register area covered and protected from potential contamination.
-Food dyes were labelled for use in foods.
-Did not observe any used single use bags on-site for reuse.
-General sanitation satisfactory.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 equivalence valid until August 08, 2028
