Observation (CORRECTED DURING INSPECTION): High temperature pot and pan washer was not achieving the minimum required temperature for sanitizing, which is 71 degrees C at the utensil surface. Temperature reached at the utensil surface at the time of inspection was 67 to 69 degrees C (temperature was dropping between cycles).
Corrective Action(s): Ensure all equipment and utensils are sanitized manually until pot and pan washer is capable of sanitizing equipment/utensils. Equipment/utensils are to be sanitized using quats sanitizer at 200 ppm following manual sanitizing procedures.

Going forward, a daily pot and pan temperature log is to be implemented to monitor and document temperatures, and identify corrective action as necessary (e.g. if minimum requred temperatures not being reached).

Observation: High temperature pot and pan washer was not capable of achieving the minimum required temperature for sanitizing (71 degrees C at the utensil surface) at the time of inspection.
Corrective Action(s): Ensure pot and pan washer is capable of sanitizing equipment and utensils. A work order was placed at the time of inspection to have the pot and pan washer serviced. Contact the Environmental Health Officer for re-inspection once pot and pan washer is in good working order. Date to be corrected by: April 18, 2024.

Proper hand washing practices were observed at the time of inspection.
Ware washing sinks supplied with hot and cold running water and drain plugs. Chemical dispensing unit in place at ware washing sinks.
Chemical dispensing unit is dispensing quats sanitizer at 200 ppm. Quats sanitizer also available in labeled spray bottles at 200 ppm.
Stored equipment and utensils maintained in clean condition.
No signs of pest activity observed at the time of inspection.
Temperature logs (cold holding units) maintained.
