Observation (CORRECTED DURING INSPECTION): Again operator is not defrosting foods safely:

frozen pork belly thawing at room temperature.

No foods observed to be contaminated
Corrective Action(s): Operator is to hire a professional pest control with regular monitoring until the mouse infestation is eliminated

All goods are to be stored off the floor >15cm (this includes non-food related goods as well such as disposables and cleaning chemicals

All lightly packaged foods (paper, light plastic) must be stored in rodent proof containers temporarily

Observation: The two multi-level shelves lowest levels still are too close to the ground.

-Bleach sanitizer bottle >100ppm as per operator's test strips -fresh towels are used with the spray bottle then hampered (single-use only towels okay)

Daily tracking sheets maintained for fridges, hot holders and mechanical washer

General Sanitation okay
Recommend the front door not to be wedged open
NOTE: the rat trap is not suitable for mice
