Referencing NCR 245890

Follow up inspection.

Reviewed results of environmental swabbing conducted on Nov 18, 2019.
Results showed that the inside of the ice scoop, the slicer and the wiener peeler were very contaminated. The inside of the plastic insert was found to be clean.
Operator has implemented new cleanign procedures and will be protecting cleaned surfaces with covering.
Please monitor staff to ensure that cleaning procedures are adhered to.

Discussed the requirements for Food Safety Plans. Generic plans for ready-to-eat sausages and seafood chowder have been provided.

Reviewed the flow of food production with operator:
- Finished product (cooked items) are not exposed to raw meats during cooling and packaging.
- All equipment that had been in contact with raw meats (in sauage kitchen and butcher room) would have been sanitized by the time products (sausages, roasts) finish cooking/smoking.
