Observation:
The 2-comp waste pipe, in the kitchen, is leaking. Waste water is pooling on the floor, this will attract and harbor pests.
Corrective Action(s):
Repair/replace the waste pipe so it no longer leaks. Clean up the accumulate water on the floor, and the debris on the waste pipes.

A routine inspection was completed:
Bar
- Keg cooler 2C; retail coolers 4C; thermometers present; and temps recorded daily.
- Glass washer [I2] was 12.5ppm.
- Quats sanitizer in spray bottle had strength of 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good
- No signs of drain/fruit flies or other pests. Professional pest company monitors the premises on a monthly basis.
- Valid FoodSafe certified staff present.
- Valid health permit and decal posted. Yearly health permit fees have been paid.

ACTION: Clean the keg cooler walls, ceiling and fan covers as they have accumulated mould on them. Increase the frequency this is being done.

Kitchen
- Reach-in cooler 4C; upright freezers -18C or colder; thermometers present; and temps recorded daily.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water. Ensure the hand sink is not blocked and is accessible at all times.
- High temperature dishwasher had a rinse cycle temp of 81.4C at the plate's surface, as per max/min thermometer.
- Quats sanitizer spray bottle and 2-comp sink had strength of 200ppm.
- Valid, FoodSafe certified staff present.
- All foods stored in food grade containers; covered; labelled; date coded; food stored in groups; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.

ACTION: Repair the leaking waste pipe of the 2-comp sink. Clean the floor under the sink to remove the accumulated water.

Brewery
- Cooler 8C (non-perishable items stored in it).
- General sanitation level is good.
- All goods stored 6" off the ground on platforms or shelves.

ACTION: Clean up the droppings around the mill every morning before production occurs, as droppings carry diseases.
