209 - Food not protected from contamination [s. 12(a)]
Observation: 1. A carton of raw eggs were stored on the top shelf above ready-to-eat food and sliced zucchini and eggplant.
2. Bowls stored within and noted in used as dispensers for bulk salt and flour containers.
Corrective Action(s): 1. Ensure proper storage hierachy in all refrigerator and freezer units to avoid potential cross-contamination of food. Ready-to-eat and produce should be stored above and away from raw eggs and raw meat.
**Issue corrected at the time of inspection** Operator moved the carton of raw eggs to the lowest shelf.
2. Remove all bowls or improper dispensers from the bulk food containers and replace with ones that are equipped with handles. These dispensers must be stored outside the bulk food storage containers or within with their handles not in contact with the food.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings noted throughout the premises. Especially in the back of house, kitchen area.
Corrective Action(s): Sweep, clean and sanitize all areas noted with mouse droppings. Pest feeds on their own fecal matter and will use it as a food source. Therefore, whenever droppings are noted, they must be immediately cleaned and sanitized, to get rid of the smell, to deter the pest from returning.
Hire a pest control company to help with the pest issue noted onsite. By next inspection, operator must be able to show district inspector their pest control report and course of actions that will be taken to deal with the current mouse issue noted.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: 1. Back door propped open at the time of inspection.
2. Openings noted on the ceiling around the fume hood and hot water tank. These may serve as entry points for pest.
Corrective Action(s): 1. Keep the back door closed at all time. If you wish to keep the back door open for air circulation, install a screen door before keeping the back door open. This is especially important as this facility is known to have a pest issue. Having a screen door will deter their entrance to the facility.
2. Customize ceiling panels that can go around and fit the gaps noted on the ceiling around the fume hood and hot water tank. All potential pest entry points must be sealed off to deter pest issue noted in the facility.

Observation: 1. Dried on debris noted on the underside of the door handles of the refrigerator and freezer units.
2. Grease buildup noted on the floor along the cookline.
Corrective Action(s): Clean and sanitize the aforementioned areas and maintain in a sanitary condition at all time. Pests feed on debris and grease and use them as food source. Maintain your premises in a sanitary condition to remove the food source for pests.

Routine inspection conducted today:
Handwash stations, including washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigerator units were at ≤ 4C.
All freezer units were at ≤ -18C.
All food stored covered in the refrigerator and freezer units and off the floor.
High temperature dish machine was able to reach 78.4C at the plate level during the rinse cycle.
Drain plugs available for the 2-compartment sink.
Interior of the ice machine and fume hood noted in a sanitary condition.
QUAT sanitizer spray bottles available for the front of house - noted at 200 ppm.
100 ppm chlorine residual detected in the bleach sanitizer containers in the back of house and sushi area.
Sushi rice noted with a pH 4.0.
FOODSAFE level 1 certificate was available for operator who was onsite at the time of inspection - verified and within expiry date.
