Observation (CORRECTED DURING INSPECTION): The foods in the hotholding unit were around 24 degC. The unit is not being used as it should be. If you're planning on using the buffet, you need to turn it on high and fill it up with hot water as instructed when you come so that it has time to preheat. Once it has been preheated, then you can store cooked foods in the buffet. Check the foods to make sure they're above 60 degC (140degF).
Corrective Action(s): The foods in the buffet were discarded. Do not store foods below 60 degC.

Observation (CORRECTED DURING INSPECTION): The dishwasher is not working. The operator is waiting for a new one. As discussed, make sure that the new dishwasher is on-site by Friday afternoon.
Corrective Action(s): Customers are to be served in disposable dishes ONLY. Do not use reusable utensils. Wash and sanitize the other dishes by hand as discussed.
