304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings found in dry storage closet, laundry closet, inside cabinet under kitchen hand sink, and inside cabinet under kitchen double sink.
Corrective Action(s): Clean up all droppings and sanitize the affected areas. Spoke to manager onsite who was aware of the problem and indicated they are working with their licensed pest control company to address the issue. Live traps will be used in the facility and advised manager to place a live trap in the cabinet under the kitchen 2-compartment sink.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Gap around plumbing lines in cabinet under kitchen hand sink and gap under door to kitchen need to be sealed to prevent rodent passage.
Corrective Action(s): Ensure the gap around the plumbing lines are sealed to prevent rodent entry. Manager indicated all doors in the facility will have door sweeps installed within the next 2 weeks. Advised manager to ensure a door sweep is installed for the kitchen door.

Observation: The plastic mixing cup for the handheld immersion blender was found to be cracked and chipped.
Corrective Action(s): Damaged food utensils are difficult to properly clean and broken pieces may fall into food. Damaged mixing cup shall be discarded.

Comments

General observations:
Refrigerator was 4.2 degrees Celsius.
Freezer was -17.8 degrees Celsius.
Food storage practices were good.
Storage areas were organized.
Hand sink was stocked with liquid soap and paper towels.
All sinks in the kitchen were equipped with hot and cold running water.
At time of inspection, the chef was not present at time of inspection therefore foodhandling practices could not be observed.
General sanitation was good - except as noted above.
High temperature dishwasher had a final rinse temperature of at least 71 degrees Celsius (as per min/max thermometer).
Discussed with manager to ensure staff remember and know how to prime the detergent pump whenever there are air bubbles in the detergent line. Air bubbles can occur in the detergent line when the bottle of detergent runs empty.
Bleach sanitizer had a chlorine concentration of 200ppm.
Chemicals were stored in a safe manner.
