Observation (CORRECTED DURING INSPECTION): Can opener was observed with a build up of debris on the part that slices the can open.
Corrective Action(s): Can opener was removed, washed, rinsed, and then sanitized at the time of inspection. Ensure food equipment is maintained in sanitary condition in order to protect food from potential contamination.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): One hand washing station in the back area (located to the right of the two-compartment prep sink) did not have paper towels.
Corrective Action(s): Paper towels supplied. Ensure all hand sinks are supplied with hot and cold running water, liquid soap, and paper towels at all times during operations in order to facilitate proper hand washing.

Observation: Small countertop deep fryer observed on table in back area. No ventilation equipment in place above fryer.
Corrective Action(s): Countertop fryer to be relocated under the ventilation canopy. Adequate ventilation equipment must be in place above cooking equipment such as deep fryers in order to prevent the accumulation of smoke, grease, water vapour which may potentially contaminate equipment, surfaces, and food, and odours which may potentially attract pest activity. Date to be corrected by: Today.

209 - Food not protected from contamination [s. 12(a)]
Observation: The following was observed in the walk-in cooler:
1. Raw eggs observed to be stored directly above vegetables (tomatoes).
2. Onions stored in garbage bag (note: garbage bag is new/clean).
3. Cash stored above food.
4. Chopped onions and lettuce uncovered.
5. A buildup of dust/mildew was observed on the walk-in cooler fan cover. In addition, some dust/mildew was observed on the wall across from the fan.
In the dry storage area:
6. Rice bags stored directly on the floor.
Corrective Action(s): 1. Raw eggs were relocated to the lowest area of the walk-in cooler. Ensure raw animal products are not stored above ready-to-eat foods as they may potentially leak onto ready-to-eat food below, which will not undergo a cook (kill) step.
2. Ensure food is not stored in garbage bags as they are not food grade and may potentially contain chemicals (such as odour suppressing chemicals) that may contaminate food. Date to be corrected by: Today.
3. Cash removed. Ensure incompatible items such as cash are not stored above food as they may potentially contaminate food below.
4. Food was covered. Ensure all food is covered to protect from potential contamination.
5. Dust/mildew from the fan may potentially blow onto food. Ensure the fan cover and wall across from the fan are properly cleaned and sanitized. Date to be corrected by: April 5, 2024.
6. Rice bags removed from the ground. Ensure all food is stored off the ground in order to protect from potential contamination, and also to faciliate effective cleaning.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings observed in the following areas:
1. On top of closed plastic buckets used for dry food storage. Note: No signs of food contamination.
2. Inside the following cabinets: Corner cabinet located to the right of the prep coolers (used for storage of plastic lids/containers, which were all stored inside sealed plastic bags), and also in the cabinet located under the POS (point of sale), used for storage of receipt paper.
Corrective Action(s): Bucket lids were cleaned and sanitized at the time of inspection.
Ensure cabinets noted above are thoroughly cleaned and sanitized. Date to be corrected by: Today.

Note: Premises is serviced by a pest control technician on a monthly basis. Email the most recent service report to the undersigned EHO by April 8, 2024.

Observation (CORRECTED DURING INSPECTION): A couple of spray bottles containing chemicals (e.g. oven cleaner) were not labeled.
Corrective Action(s): Bottles were labeled at the time of inspection. Ensure all chemicals such as cleaners and sanitizers are properly labeled to identify their contents and limit the potential for accidental misuse or contamination of food/surfaces/equipment.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Only staff member on site at time of inspection did not have valid certification for FOODSAFE Level 1 or its equivalent.
Corrective Action(s): Ensure that at all times during the operator's absence, at least one staff member on duty has valid certification for FOODSAFE Level 1 or its equivalent. Have additional staff certified as necessary in order to meet this requirement.
Note: Staff member stated that a FOODSAFE-certified staff member is scheduled to work later today. Date to be corrected by: Today.

Bleach water sanitizer available at 100 ppm chlorine in one spray bottle.
Three-compartment sink is supplied with hot and cold running water and three sink plugs. Staff able to prepare a 100 ppm chlorine bleach sanitizer solution in third compartment.
Two-compartment sink supplied with hot and cold running water.
Ventilation canopy in clean condition.
Overall sanitation (e.g. floors, walls, tables, equipment/utensils) satisfactory.
Washroom in clean condition. Sink supplied with hot and cold running water, liquid soap, a hand dryer and paper towels.
