- handwashing station stocked with soap, paper towels and hot and cold running water
- sanitizer measured 200ppm chlorine in the spray bottle and sanibucket
- dishwasher dispensed 100ppm chlorine at the final rinse cycle
- ensure that machines are greased with food grade grease
- in-use utensils in clean container, put in dishwasher every four hours as per operator
- no obvious signs of pests

- remove all self-serve condiments from the tables (salt, pepper, etc)
