- Bakery area and equipment maintained in sanitary condition - Handwashing station supplied with hot and cold running water, liquid soap and paper towel - Walk-in cooler 1C - Walk-in freezer -24C - Display coolers <4C - Pan washer operational and capable of sanitizing dishes. Final rinse temperature was >77C at dish surface (measured with thermolabel). Panwasher rinse temperature is checked daily with thermolabel. - Quats sanitizer present in warewashing sink and bucket for sanitizing food contact surfaces. Concentration of solutions measured 200ppm - No signs of pest activity noted Note: Renovations to bakery (expansion of cooler and freezer) have not yet commenced. Plans have been approved by Fraser Health. No processing to occur during construction in this area and food must always be protected from contamination. Contact Fraser Health for inspection once renovations are complete and prior to resuming processing in this area.
