Observation: 1. Product labels were placed on top of exposed bread loaves.
2. Sliding glass door was missing from the bread display case.
Corrective Action(s): 1. *Corrective action: Remove product labels and ensure that food items are protected from contamination.
2. *Corrective action: Install sliding glass door in bread display case to protect food item from contamination.

Comments

General Observations:
- handsinks accessible and stocked with hot & cold running water, liquid soap, and single use paper towels
- walk in cooler measured at 4C ambient temp.
- walk in freezer measured at -18C ambient temp.
- cake display measured at 3.9C ambient temp.
- undercounter prep tables measured at 1C and 3C ambient temp.
- dishwasher in the back corner was not in use
- department relies on a 3 compartment sink for dishwashing sink, plugs present and QUATS sanitizer measured at 200ppm
- QUATS sanitizer spray bottle measured at 200ppm
- Foods were stored off the ground (at least 15cm) and covered
- pest control monitoring on site - Orkin. No pest activity observed at the time of inspection
- general sanitation is good

NOTE: Review manual dishwashing with staff to ensure they understand the correct procedure (wash, rinse, sanitize, air dry)
NOTE: ensure staff are washing hands before, after, and in between glove use.
