Follow-up inspection to report #ZDER-B76UPF
-High temp dishwasher booster still not available for consistent hot water sanitizing of dishware, dishwasher booster has been ordered (email confirmation sent to FHA)
-High temp dishwasher has chemical sanitizer installed by certified EcoLabs technician to provide secondary sanitizing step in case hot water sanitizing levels drop under the min. 71 C. at the plate and min 82 C at the gauge
-During inspection final rinse hot water sanitizing temp noted at 73 C at the plate and 78 C at the gauge, and 100 ppm chlorine detected at the plate for chemical sanitizing.
*in discussions with EcoLabs and facility about best practice for sanitizing until booster has been installed due to different temperature requirements of unit.
-Reviewed dishwasher logs - temperatures of final rinse temp are taken currently once every day. Discussed adding sanitizer test strip testing to log daily and any corrective actions taken if temperature is under 71 C or 160 F and or sanitizer levels drop under the minimum 50 ppm chlorine.

*Fraser Health is satisfied with the current temporary measures being taken to sanitize dishware at facility until the installation of the replacement booster. Continue to monitor and log daily final rinse temp and sanitizer chemical levels to verify proper sanitation continues. Contact Fraser Health about any changes to current practice and once installation of new booster is completed.
*Correction Order still in place until replacement booster and proper operation of high temp dishwasher is achieved.
