HAZARD RATING FOR YOUR FACILITY: Low (≤15) Total Score = 11
Critical Hazards: Total Number: 2
302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
1) Blender jar used throughout the day with only a rinse between drinks. Jar is cleaned and sanitized in the dishwasher at the end of the day.
2) No sanitizer bottle available.
Corrective Action(s):
1) Blender jar must be sanitized every four hours. As the dishwasher is often not turned on before the evening shift, spare blender jars must be purchased. Send receipt of purchase to the undersigned.
2) New bottle was opened, filled with sanitizer from the dispenser.

Label the bottle to prevent cross-contamination and to ensure that the concentration of the Multi-Quat Liquid Sanitizer is tested every time because the dispenser is prone to air bubbles.

Discuss with EcoLab to turn down the temperature of the water going through the dispenser as the optimal temperature is 18-24C; quat solution is coming out at 55C.
Violation Score: 5

Non-Critical Hazards: Total Number: 1
314 - Operator has not provided acceptable written sanitation procedures [s. 24]
Observation: No sanitation log available for the dishwasher.
Corrective Action(s): Obtain a waterproof thermometer and/or thermolabels so that the dishwasher is tested once a day. Thermolabels provided for the mean time.
