All coolers are at 4 C or colder - good.
Fresh cut fries are blanched in small batches and used within 2 hours.
Reviewed menu - hollandais on weekends is kept in a hot water bath. Check food temperature with a probe thermometer. Hot holding temperature is to be 60 C or hotter.
Today, hot holding au jus is at 60 C or hotter - good.
Reviewed wings food safety procedures - good.
Check labelling for beef.
Hand washing sink in kitchen and bar have liquid soap and paper towels in dispensers.
Bleach sanitizer is strong (>400 ppm). Only 200ppm (about 1 tsp domestic bleach in 1 litre of water made fresh daily) is required. Diluted during inspection.
Commercial dishwasher has a final sanitizing rinse of 50 ppm chlorine - good.
Premises is well organized.
Operator with Food Safe certification is on -site today - good.
Food Safe certificates expire after 5 years. A refresher course or new full course is required to update certification if certificate has expired.
Pest control monitoring is in place - good. No evidence of pests during inspection.
