Observation:
The fridge is missing a thermometer inside, to ensure the actual temperature of the food is below 4C.
Corrective Action(s):
Purchase and install a thermometer inside the fridge, so monitoring of the temperature can occur.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler 4C; freezer -15C; and thermometer found in freezer.
- High temperature dishwasher had a rinse cycle temperature of 75.9C at the plate's surface as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer made up when production is being done. Bleach present.
- FoodSafe certified staff present.
- All foods stored in food grade containers; covered; labeled; and stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Ensure the exhaust filter of the fan, above the stove, is cleaned on a routine basis to remove grease and dust.
- No signs of pests.
