Routine inspection conducted. Premise kept and maintained in good sanitary condition. The following was noted at time of inspection: Walk-in cooler at 4C. Cooler is generally well organized - raw products kept separate from cooked products. There is an adequate amount of space to store products Display coolers up front varies from 2-3C Chest freezers and display stand-up freezers at -18C or less Hot-holding unit not in use at time of inspection Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels Bleach sanitizer available for use when meat is being processed. Operator diluted bleach sanitizer to 200 ppm at time of inspection Band saw and meat grinder disassembled, cleaned, and sanitized after use. Ensure that the machine is fully disassembled once every 4 hours (if continuous use) or after each use 3-compartment sink ready for use. Drain plugs available. Shelving units above 3-compartment sink are well maintained in good sanitary condition. NOTE: Operator states that the shelving unit perpendicular to the shelving unit above the 3-compartment sink will be painted and covered with a shelf liner Storage area for dry spices are adequate No signs of visible pest activity noted
