Observation (CORRECTED DURING INSPECTION): High temperature dishwasher had a final rinse of 70C on the dish surface on multiple cycles. Sanitizing cycles was unable to meet the 180F/82C specification on the machine. Sanitizing cycles only reached 70C.
Corrective Action(s): Dishwasher must be able to achieve a minimum of 71C on the dish surface on consecutive cycles to properly sanitize equipment, utensils, and dishware. While dishwasher is waiting to be serviced, equipment, utensils, and dishware can be washed in the dishwasher, followed by manual sanitizing in the 200ppm Quats sanitizer for 2 minutes.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -17C.
-Sandwich prep cooler was at 4C (top) and 3C (bottom).
-Under counter cooler was at 4C.
-Counter top cooler was at 3C.
-Cream dispensers were at 2C/4C.
-Hot holding was greater than 60C. Foods were cooked to greater than 74C prior to hot holding.
-Temperatures checked and recorded daily.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was at 200ppm. Containers time stamped and changed every 2 hours
-Mixing spoons stored on ice/water mixture.
-Ice Capp wand sanitized with 200ppm Quats sanitizer after each use.
-General food storage practices good at the time of inspection. Foods off the ground and protected from potential contamination.
-Facility serviced by a professional pest control operator on a monthly basis.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 equivalent valid until September 26. 2026.
