Observation (CORRECTED DURING INSPECTION): Observation: Chopped salad in portioned bags packed tightly in cooler above fill line, measured 12 deg. C using probe thermometer. Air temperature 2.3 deg. C
Correction: Bags of salad split into smaller batches so that it isn't as tightly packed together or over fill line to allow better air flow inside cooler. Prepared salad must be stored 4 deg. C or below to prevent pathogen growth
