Observation (CORRECTED DURING INSPECTION): * Wiping rags were found on counters in unsanitary manner; food contact surfaces were found in unsanitary manner; operator took a bucket of food off floor and placed on counter and this is unsanitary practise
Corrective Action(s): * Ensure ALL food contact surfaces and wiping rags kept in sanitary manner; wiping rags to be stored properly in sanitary manner; food contact surfaces require cleaning/sanitizing as these were found to be filthy

Observation: * Food was uncovered in walk-in cooler and not protected from contamintion-- these items were discarded; Also, food was found being stored on floor(eg. rice in water)-- operator reminded to keep ALL food OFF floors
Corrective Action(s): * Ensure ALL food covered and stored properly and protected from contamination; Also, ensure ALL food stored OFF floors to protect it from contamination

Observation: * Build up of grime/debris found through out kitchen and storage areas that requires frequent cleaning as this is not being done frequently enough
Corrective Action(s): * Ensure all cleaning/sanitizing done regularly/daily to remove build up of grime/debris and filth

Observation: * Hand sink in main kitchen was not working and operator tried to fix it
Corrective Action(s): * Ensure all hand washing sinks are working properly with hot/cold running water

* Dishwasher final rinse was 72'C; operator had to turn on dishwasher as it was not ready to use
* Cold-holding units were 4'C/40'F or colder
* Sanitizer was ready to use in back area but not available at food prep line; operator reminded to have ready to use sanitizer in all work areas
* Monitoring records were
* Food equipment was being plugged in/used beside hot water tank and this area not suitable or food grade
* Note: ALL food to be covered in storage areas including walk-in cooler and dry storage area
* Note: store wiping rags in sanitary manner; filthy wiping rags were found on counters, etc., and not acceptable
* Note: Build up of grime/debris found on food contact surfaces, food equipment, shelving and cooking line areas including vent hood; these areas require more frequent cleaning(eg. daily, etc)
* Operator reminded to wear proper attire when handling food (eg. aprons, hair protection)
