On Follow-Up:
-Eggs are now being cooked in a rice cooker. Remember, you do not have adequate ventilation for producing grease laden vapors. Your exhaust system above the oven is designed for steam and heat only.
-Shelving that's already existing above the sink is being used for air drying dishes rather than for storing clean dishes.
-Manager and owner have FS Level 1 certification. If one of you aren't here, there has to be at least one staff on-site with FS level 1 certification.
-Sink's been fixed
-Ice machine is clean
-Flooring behind the display cooler has been refinished.
-Temperature log's being maintained
-Permit fee received for $150 (Cheque #696).

USE CLOSED CUPBOARDS FOR STORING CLEAN DISHES TO PREVENT COFFEE GRINDS FROM GETTING ON THE DISHES.
