2 styrofoam boxes filled with 8 freshly delivered fish submersed in ice were sitting on a metal cart at room temperature in the customer sale area. Staff member explained that this fish is kept submersed in ice at all times and is for immediate sale to customers. She had mentioned it is the equivalent of a public market selling seafood on ice. Fish is returned to the freezer after 2 hours at room temperature. Fish was individually probed to be at 0.9 deg C- 1.2 deg C.

Ensure to monitor fish temperature with thermometer to ensure that it is staying at <4 deg C at all times.
