Observation (CORRECTED DURING INSPECTION): QUATs sanitizer in pails with wiping cloths measured at 0 ppm QUATs concentration with test strip. QUATs sanitizer was replaced with fresh sanitizer during inspection by staff which measured at 200 ppm QUATs concentration
Corrective Action(s): Prepare QUATs sanitizer at 200 ppm QUATs concentration throughout the day (as per approved sanitation plan) to adequately sanitize food contact surfaces. Verifty sanitizer strength with available QUATs test strips on site.

Routine Inspection Conducted

Observations:
- Walk-in cooler at 3'C
- Walk-in freezer at -18'C
- All preparation coolers and drawers at or below 4'C (top and bottom)
- Temperature logs are maintained
- General sanitation of premise is good during inspection
- Hand washing stations are adequately supplied with hot and cold running water, liquid soap and paper towel
- Chemical dishwasher measured at 100 ppm chlorine concentration with test strip
- 2-compartment sink with drain plugs and QUATs sanitizer available on site
- Chlorine and QUATs test strips are available on site
- Soft drink dispenser nozzles observed in sanitary condition. Staff stated that they are cleaned each night
- All food observed covered and stored at least 6 inches off the floor
- First-in-first-out method implemented (time stamp labels available on food storage containers)
- Raw meat observed stored away from ready-to-eat foods
- Equipment stored in a sanitary manner
- Chemicals are stored away from food
- FOODSAFE Level 1 trained staff available on site
- Operating permit posted in a conspicuous location on site
- Staff observed wearing clean uniforms

*REMINDER: ensure to change wiping cloths each time sanitizer is changed to ensure QUATs concentration is at the adequate concentration. Verify sanitizer strength with available test strips on site.
